    THE CHICKEN SCHNITZEL

Golden, crisp-edged and confidently simple – at Aja, this schnitzel wasn’t born from overthinking, but from a regular guest’s craving, gradually perfected by Chef Jamie Wakeford. Flattened chicken breast, breadcrumbed and fried until just right, then elevated with a sharp, herby salsa verde, a lick of rich aioli, and the crowning touch – a fried egg that transforms bistro comfort into something unexpectedly perfect. No fluff, no fuss – just comforting flavours delivered with quiet confidence. Call it schnitzel, cutlet, fried chicken – it’s comfort food with a backbone. Modern bistro, done right.

Beverage companion: The house pour, El Gos Blanc, is a bright, floral white with a hint of minerality – ideal for cutting through crispy edges and herby sauces without overpowering the plate.
