    Casting a Culinary Spell

    Chef Noi is celebrating a trio of achievements that have cast a spell on Phuket's fine dining scene

    Tammasak Choothong – Chef Noi – undoubtedly one of Thailand’s most notable chefs, continues to inspire new generations of Thai chefs and diners with his drive for culinary magic and perfection.

    It’s all founded on an impressive international track record that takes in graduating from Ueberkingen Culinary School in Germany in 1999 with a Master’s Degree in Kitchen Development; a career in some of Europe’s top restaurants in Europe including the Top Air  Michelin-star restaurant and Germany’s award-winning Taku ; and on board the Cunard Queen Elizabeth II  cruise liner.

    Returning to Thailand, Chef Noi’s career continued with positions as Executive Chef at JW Marriott Resort & Spa and Corporate Thai Chef at Banyan Tree Hotels & Resorts, both in Phuket. As well as this, he’s inspired Thai chefs through his appearance on Iron Chef Thailand  as the show’s European cooking chef, and his frequent hosting of cooking demonstrations and shows.

    Chef Noi is a restless talent, continuing to refine his skills through consultancy work designing menu concepts, recipes, and kitchen management for leading hotels and their restaurants.

    And now, with almost 20 years of culinary experience under his belt, he’s brought his passion to new life with three magical projects on Phuket.

    In 2010, Chef Noi set out to pursue his lifelong dream of owning his very own restaurant, and opened the doors of the flagship Suay Restaurant in Phuket Town.

    This is where he channels his culinary creativity into a distinctive menu, infusing European techniques with traditional Thai dishes.

    Tucked away in a quiet part of Phuket Old Town, Suay attracts diners with its warmth and cosiness, lush courtyard and a welcoming sense of home, and of course an outstanding selection of delectable dishes – innovative and authentic northeastern cuisine with an international twist.

    In October 2017 Chef Noi expanded his footprint on the island with a second Suay Restaurant in Cherngtalay, taking the experience of dining at Suay to new heights by offering an ambiance of elegance in a relaxed setting with stylish and contemporary décor.

    Both these One of a Kind restaurants are augmented by the third ace in Chef Noi’s repertoire, his all-inclusive service for catering, restaurant and kitchen consultancy, that has a stylish cooking school and studio to boot – Positive Kitchen.

    This venture has taken over Chef Noi’s home at Permsap Villa near Cherngtalay, where a professional design kitchen and private dining terrace seating 15 guests regularly welcomes visitors for private cooking classes, wine tastings, bespoke dinners, and product launches.

    Positive Kitchen also offers Chef Master Classes to professionals seeking to perfect different cooking techniques and explore new approaches to cooking, with innovative versatility that transports visitors to an inspiring culinary world.

    Much like Chef Noi himself.
