    Iron Plate Black Pepper Beef

    The flavour of this dish is robust and bold, with a perfect balance of savory, spicy, and slightly sweet elements. The beef is marinated for several hours before being seared and stir-fried with two-colour Chinese peppers, onion, black peppercorns, and seasoned with the special secret sauce recipe of the restaurant. The black pepper adds a robust heat that is complemented by the natural sweetness of the beef. The dish also has underlying umami notes from soy sauce and other seasonings used in the recipe.

    Beverage companion: As with most beef dishes, a robust dry red is preferred. They have a Rumours Cabernet Sauvignon from South East Australia which will do the trick. Plum and honey pervade on the palate.
