Chef Mark Jones’s wood fire roasted Lumina lamb rump is a standout – sourced from New Zealand and slow-roasted to tender perfection. It arrives with silky Parisienne gnocchi, smoky pancetta, sweet peas, and slow-roasted cherry tomatoes that deliver bursts of intensity. Charred baby gem adds a hint of bitterness, while roasted onion purée brings an earthy depth. A glossy pan jus ties every element together.
