    SEABASS CEVICHE

    Mrs B has a reputation for doing simple things well and their seabass ceviche exemplifies this. Fresh locally caught sea bass is filleted, diced and given a light cure with salt and lemon before being bathed in ‘leche de tigre’, olive oil and pepper. A combination with finely diced green and ripe mango, sliced shallot and coriander bring both bite and balance to the fish. Served with a rich carrot puree to cut through the acidity, this dish is fresh, light and to the point.

    Beverage companion: For a wine paring try a Chablis or even an Albarino, which both stand up to the punch and freshness. If you’re in the mood for a cocktail go with Mrs B’s classic Daiquiri or get back to basics with a cold draft Asahi beer.
